I made this particular dish the other day and it was absolutely wonderful. My wife, who normally does not eat big portions, cleaned off her plate and wanted more, so that is a very good sign.

The thickness of the tuna steak you use really depends on how rare you like your tuna. Because you are only searing the outside of your tuna steak, it will not be in the pan for very long. So the thicker the steak, the more rare the center will be.

I personally do not like my tuna too rare, so I usually make this recipe with thinner cuts of tuna. This is just a preference, not a requirement. Many people, including chefs say the only way to eat tuna is rare. I guess you will have to be the judge.

Seared Sesame Encrusted Ahi Tuna with a Cilantro, Garlic and Lime sauce..

I should mention one thing before we begin this recipe. I do not follow exact measurements in recipes. I measure everything by eye, so the following measurements are only to be used as a guide. So don’t get too mad at me!

This is optional, but I like to toast the sesame seeds in a dry pan first before I put them on the tuna. The seeds become nutty and aromatic when you toast them. This is highly recommended if you have the time and is quite easy to do. Simply heat a dry pan over medium heat, then add the seeds shaking the pan occasionally. You may have to do this in batches, depending on how many seeds you are toasting. You do not want to overcrowd the pan. Keep an eye on the seeds and make sure they do not burn. Toast them until they darken a bit and start to become fragrant. Remove and let them cool before adding them to the tuna.

INGREDIENTS:

1/4 Cup Black Sesame Seeds 1/4 Cup White Sesame Seeds 1 Tablespoon of Sesame Oil 2 – 6 ounce Ahi (Also known as Yellow Fin) Tuna Steaks Salt and Pepper to Taste

MARINADE/ DIPPING SAUCE

1/ 2 Cup of Low Sodium Soy Sauce (Who needs the extra sodium, right?) 1 Lime (Juice and Zest – If you want more lime flavor, add another) 1- 2 Cloves of Garlic Minced 2 Tablespoons of Honey 1 Tablespoon of Sesame Oil 2 Tablespoons of Freshly Chopped Cilantro Leaves

1) Prepare the marinade. Add all marinade ingredients to a small bowl and mix well. Reserve half of this marinade in a separate container to use as a dipping sauce.

These types of Adulterants which are incidentally which enters the food products are called as Incidental Adulterants or Unintentional Adulterants.
The Incidental adulterants pass sequentially through the food chian in the following way: Contamination begins when farmers use pesticides to protect crops. The Health department sprays pesticides to control malaria-causing mosquitoes. Residues remain long after spraying .Cattle, fodder and chicken feed are affected, and ground water, meat, fish, milk and egg get toxic. More spraying done to prevent fungus and rodents from attacking stored grain. Further increases the residue levels in foodstuffs. Sellers dip vegetables in pesticides to make them look fresh as well as to preserve them. Oils and sweets are adulterated with prohibited substances. Even after cooking toxic residues are not destroyed and when ingested pesticides are absorbed by small intestine. Fatty tissues present in the body store these pesticides which can lead to the damage of heart, Brain, kidney and liver. Strict control on various sources of contamination, established control of quality control by authorities, strict follow up with the accepted standards and food labeling will avoid the excessive contamination of food with metals. These standards and rules include Prevention of Food Adulteration Act 1954(PFA 1954), PFA Rules 1955, Standard weights and measures Act 1976, AGMARK, Bureau of Indian Standards (ISI) , Food Safety and Standard Act 2006( FSSA 2006 ).
The incidental poisoning can be prevented by doing the following things:
–>Regular market surveys to warn people dangerous build-up of toxins in food.
–>Stepping up the integrated pest-management programme to teach farmers to use pesticides judiciously. No spraying should be done a week, before harvest.
–>Taking up on a war footing the control of pests using their natural predators.
–>Using safer pesticides like synthetic pyrethroids or Malathion.
–>By washing vegetables thoroughly before cooking.

Why do runners get calf cramps?

For an issue that is so common, it is interesting to see that the running experts don’t have an all-inclusive explanation for the causes of leg cramps. A number of factors have been identified that are possible contributors to calf cramps. These include too much exercise / exertion, dehydration, poor nutrition etc.

Too much exercise

One of the known causes of calf cramps is exertion. When your legs are tired and you stretch your calf muscles leg cramps can suddenly hit you. What to do when you get calf cramps while running?

If you feel calf cramps coming up during your run, then it is best to slow down. You may be able to keep on walking/running just at the threshold of getting leg cramps or not. When they hit, you will have no choice but to stop your running. Then try to get rid of the calf cramps by stretching your calves and massaging them. A known stretch of the calves is to keep your heels on the ground, pull your toes up and try to reach your toes with your hands. When the pain has subsided, you can try to start running again, but at a slower speed. Also try to avoid any sudden turns, basically anything that will put any extra pressure on your calves. Shorten your run as much as possible and make sure you have a nice warm shower afterwards. After that, apply some heat to the calves, e.g. via tiger balm, arnica oil. This will help blood circulation.

How to prevent leg cramps?

Usually you will know why you got your calf cramps while running. You might have pushed yourself too hard; you might have been ignoring your diet and fluid intake. As said before these are all seen to be contributing factors to leg cramps. So prevention going forward depends on you taking a critical view at those factors and establishing what the cause was. When you are running to become faster, fitter, better you will have the occasional leg cramp attack. But if you feel you are doing everything right and they keep on coming back, then, instead of going for your usual training run, run to see a doctor!

A Deep Fish Fryer and California Rock Cod Combine to Make a Delicious Meal

One of my favorite fishing trips is to the north coast of California for rock cod, and one of my favorite ways to prepare it is with a deep fish fryer. The problem is you have to catch it before you can cook it, and thats why I like fishing for rock cod. If you can get your boat in the water, and you know where the reef is, you are going to catch fish. Its just that simple. And a fresh catch along with a deep fish fryer, combine to make a delicious meal.

After all, one of the reasons we fish is to put food on the table. After spending a day on the water, and the time and effort to clean and prep your catch, a tasty meal of deep fried rock cod is a nice reward.

When selecting your deep fryer, the first choice you have to make is, electric or gas. If you’re like me and do a lot of outdoor cooking with no electricity available, your only choice is a propane burner. My favorite is the Bayou Classic fish cookers. They are well built, portable propane burners, and easy to use.

To prepare your rock cod for the deep fryer you will want to fillet them. You will have to cut out the rib cage and check for any other bones you may have missed. Then cut your fillets into 2″ strips. Keeping your pieces of fish approximately the same size, helps ensure that all are properly cooked.

Next, you need to coat your fish. You can use a batter or coat it with egg and breadcrumbs. I generally prefer a beer batter, but, it comes down to personal preference. Just make sure you do coat it. This helps keep the oil out and the moisture in.

Make sure you use a vegetable oil with a high smoking point. I generally use peanut oil, but canola oil or soybean oil will work as well. You need to pre-heat the oil to 350-375 degrees F. You don’t want it to fall much under 350 degrees , or the oil will soak through the batter making the fish taste greasy.

When cooked at the proper temperature, your batter will be a crispy golden brown and the cod will be moist and delicious. So, make sure you have a quality thermometer with your deep fish fryer. If not, you can drop a small piece of bread in the hot oil, if it turns golden brown within 45-60 seconds, the oil temperature is fine.Don’t overload your fryer, as this will lower the oil temperature. Just fry 3 to 6 pieces of fish at a time, depending on the size of your fryer.

And now, it’s time to eat, and there are a variety of tasty ways to consume your deep fried rock cod. It tastes great all by itself, or dip it in your favorite sauce. One of my all time favorites is fish tacos. Whether you like a crispy shell or a soft shell, deep fried cod fits very well in either, and makes for a delicious meal.
